I get a lot of requests for “healthy” recipes. Healthy can actually mean a lot of different things to a lot of different people, so it’s not always cut and dry. The majority of the meals I tend to make for my wife and myself are aimed to maximize lean muscle mass, and at the same time, encourage body fat loss. This appears to be what most of you are interested in too. So, for the most part, that’s what you’re going to get here. I just wanted you to know the method behind my madness before I began to start sharing some of my favorites with you.
With that said, a client of mine shared this recipe with me last summer and it has quickly become one of my favorite summertime grilling recipes. Thank you Sue! I like to make up a batch of this pineapple fried rice to go along with it.
Ingredients:
- 1 lb. large grilling shrimp
- 1/4 cup Tequila
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 shallot, minced
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- Salt and pepper to taste
Directions:
- Combine all of the above in a bowl or freezer bag and marinate for 3-4 hours.
- Assemble the shrimp onto skewers.
- Grill for 2-3 minutes per side.
